Cantonese steamed sea perch w/ ginger, shiitake and rice wine / exploded oil / charred cabbage / pumpkin purée
Lightly cured salmon and travelly w/ coconut vinaigrette, coriander oil, crispy ginger shreds, basil flowers
Drunken chicken w/ 3 types of rice wine (Shaoxing, yellow spiced, aged red Fujian)
